Mouse = Rotate Camera, Scroll = Zoom Camera
W,A / Arrows / Right Click = Move Rod Cast Direction
Left Click / Space Bar = Cast Rod, the higher the rod when you release space the farther the lure launches.
Press ESCAPE to release mouse lock.

If you see a fish jump out of the water throw a lure after it and you will catch it straight away.
